Ketogenic Lemon Bars

One of our biggest tips for following the Ketogenic diet—or any diet, for that matter—is to constantly try new things. As soon as your food becomes mundane, it becomes so much easier to fall off track. But don’t give up all that hard earned progress just yet! We want to share one of our favorite Keto desserts. This recipe is from (by Mellisa Sevigny) and it will have you turning a blind eye to the snow and dreaming of summer; we’re talking Keto lemon bars.

This recipe was pretty low maintenance and rated a total hit by all taste-testers! Once you get a good grip of the recipe, you could even modify it with a Keto meringue topping, cream cheese (for a more cheesecake consistency), or trying out different flavors. Check it out:

Low Carb Lemon Bar Recipe — Keto & Gluten Free


For the Crust:

  • 6 Tbl butter
  • 2 cups almond flour
  • 1/3 cup granulated sugar substitute (we used Stevia)
  • 1 Tbsp freshly grated lemon zest

For the Filling:

  • 1/2 cup butter
  • 1/2 cup granulated sugar substitute
  • 1/2 cup fresh lemon juice
  • 1/4 cup lemon zest
  • 6 egg yolks
  • 1/2 tsp xanthan gum
  • 2 Tbsp unflavored gelatin


For the Crust:

  1. Melt the butter in the microwave or a small saucepan. 
  2. Add the almond flour, sweetener, and lemon zest, stirring until fully combined. 
  3. Press the dough evenly along the bottom and 1/2 inch up the sides of an 8X8 inch square pan. **Line the pan with parchment paper for easy removal & cleanup**
  4. Bake at 350 degrees for 10 minutes.
  5. Remove and cool while you make the filling.

For the Filling:

  1. Melt the butter in a small saucepan on low heat.
  2. Remove from heat and whisk in sweetener, lemon juice, and lemon zest until dissolved.
  3. Whisk in the egg yolks and return to the stove over low heat.
  4. Whisk continually until the curd starts to thicken.
  5. Remove from the heat and strain into a small bowl.
  6. Whisk in the xanthan gum and gelatin until dissolved and smooth.
  7. Pour the filling over the pre-baked crust and spread out evenly to edges of the pan.
  8. Bake the bars at 350 degrees for 15 minutes.
  9. Remove and cool.
  10. Sprinkle with powdered Stevia before serving (if desired)
  11. Enjoy!
